It was the first origin we ever bought in bulk, and it still anchors our Drip blend, so any Guatemalan single origin we bring in has to hold its own. This one does. It comes from the Chuaquenun community in Joyabaj, high in the Quiché region, where 1,550 smallholder farmers bring their cherry to a wet mill that opened in 2021. Since not every farm has its own transport, couriers gather the pickings from around the community and deliver them together. The coffee is honey processed, which keeps the fruit in close contact with the bean: cherries are depulped and laid directly on raised screens, then turned by hand for about a week under the sun.
